Sup Pasta Bening

sup-pastaBahan Kaldu ikan:
250 gram ikan kakap
1 buah bawang Bombay potong-potong
1 batang daun bawang iris
1 batang seledri iris
5 biji merica butiran
1 liter air

Bahan Isi :
12 udang ukuran sedang
2 sdm minyak goreng
2 siung bawang putih memarkan
5 cm jahe memarkan
125 gram pasta/angel hair, rebus matang
150 gram kapri
2 sdt garam
1/2 sdt merica bubuk
2 sdm saus ikan/kecap ikan
2 sdm air jeruk nipis

Taburan : irisan daun bawang dan daun ketumbar

CARA MEMBUAT :

  1. Kaldu ikan : masak ikan bersama bawang Bombay, daun bawang, seledri, merica butiran dan air, setelah mendidih dan ikan matang angkat dan saring.
  2. Panaskan minyak, tumis bawang putih dan jahe hingga harum, masukkan ke dalam kaldu dan didihkan kembali.
  3. Masukkan udang, kapri, masak hingga udang matang, tambahkan garam dan merica bubuk, aduk rata, masukkan saus ikan dan air jeruk nipis angkat.
  4. Siapkan mangkuk isi dengan pasta potongan ikan dan tuangkan kuah dengan isiannya, taburi daun bawang dan daun ketumbar.

Udang Masak Kecap

udang-masak-kecapUntuk menbuat Udang masak kecap

Bahan :
½ kg udang buang kepala cuci sampai bersih
3-4 sdm kecap manis
1 btg serai di geprek
2 lbr daun salam
2 cm lengkuas digeprek

Bumbu halus :
2 butir bawang putih ukuran besar
5 butir bawang merah
1 sdt garam
50 gr cabai merah keriting (bisa dikurangin sesuai selera)
½ sdt ketumbar bubuk
1 cm kunyit
¼ sdt merica bubuk
1 cm jahe
½ sdt gula pasir (bisa pakai bisa tidak tergantung selera)
Vetsin ¼ sdt apa bila suka (tidak direkomendasi)
2 butir kemiri

Cara membuat :
Tumis bumbu halus sampai harum lalu masukan serai, daun salam, dan lengkuas aduk-aduk .
Setelah itu baru masukan udang dan kecap manis, aduk masak sampai matang dan airnya kering/ mengental.

Gulai Ayam Sayuran

Gulai Ayam Sayur

Bahan :
1 ekor ayam, potong 20 bagian
1 sdm air jeruk nipis dan 1/2 sdt garam
3 sdm minyak goreng
1 liter santan dari 1 butir kelapa
500 ml santan kental dari 1 butir kelapa
2 lembar daun salam
2 cm lengkuas
3 lembar daun jeruk
250 gram nangka muda, potong-potong rebus matang
5 lonjor kacang panjang, potong-potong
3 lembar kol iris
2 sdm air asam jawa
1 sdm bumbu pelezat serba guna rasa ayam

Haluskan :
5 cabai merah besar
8 buah bawang merah
5 siung bawang putih
1 sdt garam dan 1/2 sdt merica bubuk
1 sdt gula pasir

Cara membuat :

  1. Ayam cuci bersih, lumuri dengan air jeruk nipis dan garam, diamkan sebentar, cuci bersih kembali dan tiriskan.
  2. Panaskan minyak goreng, bumbu halus hingga harum, masukkan ayam, salam, lengkuas dan daun jeruk, masak hingga ayam berubah warna, masukkan santan encer, masak hingga ayam matang dan kuah menyusut, tambahkan nangka muda, kacang panjang, kol, santan kental dan bumbu pelezat serba guna rasa ayam, masak sebentar angkat.
  3. Sajikan dengan nasi.

Soto Bandung

soto-bandungBahan yang dibutuhkan untuk membuat Soto Bandung:
250 cc air untuk merebus.
750 gr daging sandung lamur/kikil/jeroan campur.
100 gr lobak, kupas, iris tipis bundar.
3 sdm minyak goreng, untuk menumis.

Bumbu:
3 siung bawang putih, kupas dan memarkan.
50 gr lengkuas, bersihkan, memarkan.
2 cm jahe, memarkan.
3 batang serai, memarkan.
1 sdm gula pasir,
2 bungkus kaldu ayam bubuk.

Pelengkap:
5 sdm bawang goreng.
100 gr kacang kedelai, rendam kurang lebih 2 jam, tiriskan, goreng.
5 sdm irisan daun bawang
5 sdm irisan daun seledri.
Merica bubuk, sesuai selera.
Irisan jeruk nipis.
Emping Goreng.
*Sambal.
Untuk membuat Sambal:
15 buah cabai rawit tua, rendam sebentar dalam air mendidih, 1/2 sdt garam, 1/2 sdm gula pasirt ditumbuk kasar.
1/2 sdt cuka.
50 cc air.
**Aduk rata**.

Cara membuat:

  1. Didihkan Air, masukan daging. Masak sambil ditambahkan air bila perlu hingga daging lunak. Angkat dagingnya, lalu potong kecil-kecil. Sisihkan.
  2. Tumis bawang putih hingga kuning, masukan kedalam kaldu bersama bumbu lainnya dan potongan daging. Didihkan irisan lobak. Masak sebentar. Angkat.
  3. Cara menghidangkan: Tempatkan merica bubuk dalam mangkuk saji, beri perasa jeruk nipis. Tuang kuah kaldu beserta isinya, taburi bawang goreng, kedelai goreng, daun bawang, dan seledri. Hidangkan dengan emping goreng, kecap dan sambal dalam tempat terpisah

Ayam Bumbu Pedas Kacang Merah

Bahan:
– 10 potong sayap ayam, masing2 belah menjadi 2, cuci, dikucuri air jeruk nipis
– 100 gram kacang merah, rebus sampai empuk (bisa juga sih beli yang kalengan dan udah mateng supaya ga repot )
– 1 sdm minyak goreng untuk menumis
– 1 sdm santan bubuk
– gula merah secukupnya
– garam secukupnya

Bumbu:
– 3 siung bawang putih, haluskan
– 1 butir sjalloten/ 2 siung bawang merah, iris halus
– 10 buah cabe rawit merah (atau sesuai selera, tumbuk halus)
– 1 lembar daun sereh, memarkan
– 1 ruas lengkuas, memarkan
– 1 sdt kunyit bubuk
– 2 lembar daun salam
– 3 lembar daun jeruk

Cara memasak:
– Tumis bawang putih, sjalloten, lengkuas, daun jeruk, sereh dan daun salam sampai harum
– Masukkan cabe, aduk2
– Masukkan ayam, aduk sampai merata
– Masukkan kacang merah, tambahkan air
– Tunggu sampai air mendidih, masukkan santan bubuk
– Tambahkan garam, gula merah dan kunyit bubuk
– Aduk sampai ayam matang
– Angkat, dan sajikan
